Today I’m feeling a little angry.
I’m sure a post will come out of that later, but for now I’m just going to breathe and bake, breathe and bake. Or I guess in this case, “no bake” and breathe. You may see a trend in my recipe posts by now. They are almost all dessert/treat type recipes. And, they almost all involve chocolate chips. I believe in the power of chocolate chips.
We eat at least one “treat” each day (ok, more like two…) Many times they are homemade goodies (like chocolate chip cooke dough dip or
some three-ingredient homemade chocolate) but we also enjoy coconut ice cream or fruit pops in the summer, and organic fruit snacks (like Annie’s bunnies), or granola bars that fit allergy needs. An organic lollipop even finds its way into the mix from time to time.
My kids look forward to their treats, and I do, too. The fact that they are generally filled with healthy fats and protein, and free from refined sugars and yucky stuff that makes me sick is even better. I feel like it goes back to the concept that if you deprive yourself now, you’re more likely to go on a bender later (a dessert bender! they are kids!)
Yes, my kids do eat the less healthy treats at parties, playgroup, etc.-if I only had a video of Jackson polishing off a cupcake- (80/20!), but at home we try to keep it on the healthier side.
Here’s a recipe for my favorite treat that I make every week. We call them cookie balls in our house, and they are delicious. These are all over the internet, so they are nothing new, but they are SO EASY AND SO GOOD. There are many different types you can make once you get the basic recipe down, by substituting the type of nuts you use, adding cocoa powder or spices, and rolling in toppings like flaked coconut.
I’ve been making these for a long time, and am not totally sure which recipe I originally used, but I know that Chocolate Covered Katie
(CCK) has a few great “fudge baby” (as she calls them) recipes and Elise from Kale and Chocolate also has tons of them on her site and in her cookbook. I love them all equally, like my kids, but some days I just jive better with one than the others. (What? Not you?!)
Here’s the basic recipe, which is closest to what I use most often. It’s from Chocolate Covered Katie. You might even have everything in you cabinet/refrideratior. Which is good since these pictures are probably making you hungry.
- ⅔ Cup Pitted Dates
- ½ Tsp Vanilla extract
- ¼ Cup Cashews (I like to use Almonds, CCK likes cashews).
- ¼ Cup mini chocolate chips (I like Enjoy Life Brand)
- pinch salt
- Place dates, nuts, salt, and vanilla in a food processor.
- (I actually like to pulse the almonds up first, but CCK doesn't mention it).
- Add the chocolate chips and pulse until mixed.
- Roll the mixture into bite sized cookie balls
- (Y ou may want to wet your hands depending on how sticky your mixture is)
- I like to pop them in the fridge, but it's not necessary.
Go to town. Get creative. Put them in lunch boxes. Enjoy them at work. Gift them to friends. Make them your own, and watch them magically disappear.
